OUR STORY

Crow Hollow Cawfee Co. is a small-batch coffee company rooted in place, history, and intention. We believe coffee is more than a product — it’s a daily ritual that carries stories, landscapes, and the people who shaped them.

Our roastery sits in New Salem, Massachusetts, along the wooded edge of the Quabbin Reservoir and the lands that once held the towns of the Swift River Valley. Not far from our door, the hills slope toward the water that now rests over Dana, Enfield, Greenwich, and Prescott. The railroad once known as Rabbit Run passed through this same stretch of ground, connecting the valley’s towns long before the reservoir changed the landscape.

We roast coffee within that landscape — a place where memory is never far from the surface. The forests remain, the hills still hold their shape, and the quiet that followed the valley’s transformation is part of everyday life here.

The name Crow Hollow comes from the wooded hollows that shape this region — the quiet pockets between hills where the land dips and sound carries differently. These places feel tucked away, almost hidden, yet deeply connected to the surrounding landscape. They are the kind of places where stories linger.

The crow itself has long been a symbol of observation and memory — a watchful presence tied to the land. At Crow Hollow Cawfee Co., that spirit guides our work. Each series we release begins with a place or an idea worth honoring — stories that deserve to be carried forward.

Roasting becomes our way of translating those stories into something tangible: coffees built with balance, structure, and restraint rather than novelty or extremes.
